The vineyard of Aÿ was already recognized at the time. Unfortunately, the family was forced to sell the brand, due to the 1929 crisis. Today, the group Bollinger owns the vineyard. Located on 80 hectares of a chalky soil, AYALA produces champagnes with grapes coming from the 17 different vineyards. The grapes are chosen for their respective characters, and able to reflect the style of the house. Everything is being implemented in order to focus on quality over quantity.
